Triang, Pahang, located across the Titiwangsa chain of mountains, 80km east of Kuala Lumpur. Located in the district of Maran in the state of Pahang, this area is relatively rural and is surrounded by lush, green forests. At this plantation, grafted cacao trees of selected varietals are systematically cultivated on gentle slopes at an altitude of 330m above sea level.
The fruit pods are broken using automation and fermentation takes place for five to six days during which beans are turned twice. After fermentation, the beans go through a pressure jet wash before drying.
Flavour notes : Malt, toasted chestnut, and shitake.
